Baked Apples with Gorgonzola & Figs

Ingredients

1 ¾ Cups Sugar

2 Cups Moscato d’Asti or other sweet, fragrant wine.

1 Cinnamon Stick

8 Tablespoons (1 stick) butter, cut into ½-inch cubes, + 2 Tablespoons for the pan

10 Medium Cortland, Golden Delicious or Empire Apples, peeled and cored

5 very Ripe Figs, stemmed and halved

10oz Gorgonzola dolce, cut into 1-ounce pieces, at room temperature

 

Directions

Preheat the oven to 375°F.

1. Place the sugar, wine, and cinnamon stick in the saucepan and bring to a boil over medium-high heat. Lower the heat and simmer for 10 minutes, or until the consistency of a thin syrup. Remove from the heat and stir in the cubes of butter.

2. Butter the sides and bottom of a deep 13 x 9-inch baking dish, and place the apples upright in the dish. Press each fig half into a shape that will fit into the cavities in the apples, and stuff the apples with the figs. Pover the Moscato syrup over the apples, place the dish in the oven and bake, peridodically basting the apples with the pan juices, until the apples are quite soft but still standing, 35 minutes.

 3. Remove the baking dish from the oven and immediately place a piece of Gordonzola on top of each fig, like a hat on a cavity. Allow to cool for 10 minutes.

 4. Serve warm or at room temperature, with a spoonful of pan juices over the top.
